Merry Christmas!






We had a wonderful trip home to see Aaron's family in Michigan. Other than a slight delay getting home due to mechanical problems on the plane, our trip went off without a hitch. We had a great time at Christmas - it was very special. We also got to see Matt & Beth's new house (hopefully), and to wish them good luck with their baby (due in July 2010)! We also got to see cousins BJ and Carrie (who are also expecting). Thanks for everything! We were able to go out with Anica's friend Shalini from internship in Ann Arbor! We also got a NEW digital camera, so will be able to post pics again.

Wedded Bliss






Besides the sickness that came after it....

But, the wedding was perfect and wonderful, even with all of the rain. We were really touched that so many people made it out to celebrate and support us! A special thanks to Anica's Mom Evie for all the hard work she put into planning and helping to make this weekend so wonderful - we could not have done it without you!

Thanks to everyone who participated in our wedding! We had a wonderful time, and hope that all who attended did as well. We had several requests for recipes of the veggie options at the wedding dinner - so here they are (thanks to my mom - Evie - and my sister-in-law - Aimee)!!

Evie's Tofu Cutlet Parmesan
24 oz. tofu—cut into 15 slices
2 eggs, beaten
1-2 cups seasoned bread crumbs
12 oz. whole wheat spaghetti
1 jar pasta sauce
1 cup shredded mozzarella
parmesan cheese & oregano to top

1. Preheat broiler to low
2. Coat tofu slices in egg & bread crumbs; put on oiled cookie sheet and broil ~8 minutes per side
3. Layer a little pasta sauce in baking dish, then 1/2 cutlets, then sauce, then 1/2 cheese
4. repeat layers; sprinkle parm and oregano on top
5. cover and bake 20 minutes at 350


Skillet White Bean
(I think they used wild rice at the wedding)

½ cup chopped red onion
salt & pepper to taste
1 TB ketchup
2 TB butter
1/6 cup lemon juice
1 TB brown sugar
1 ½ cups uncooked brown rice
shredded cheese to top
1 tsp sage
1 can (15 ounces) navy beans, drained
1 can (15 ounces) butter beans, drained

1. Cook rice in 3 cups water; set aside
2. Meanwhile, in large skillet-- cook onion in butter over medium heat. Stir in lemon juice, brown sugar, sage, ketchup, salt, & pepper. Add beans & stir to coat.
3. Cover & simmer over medium heat 10 minutes until heated through.
4. Serve over rice & top with cheese

Anica's trip home


I went home to MA over memorial day weekend - I didn't end up getting too many pics, but was at least able to get a few. Thank dad and georgette for taking time out to have brunch!

Happy Birthday Tristan!


May 30th was my internship-mate Tristan's birthday - we had a rare intern night out on the town to celebrate. It is hard to believe that the opportunities for us to hang out are coming to a close - time has gone by fast this year in some respects!

Jess and Brad's Wedding





Aaron and I met up in Ludington for Jess and Brad's Wedding on May 16th, 2009. Congrats guys! It was a beautiful day and a beautiful wedding - thanks for inviting us! It was great to see our friends again!

Happy Birthday Grandma Pless!


Grandma Pless' birthday was May 13th - she is 92! Dad and I went out to visit with her, and she seemed to be doing pretty well. It was nice to get out of the 'burgh for a day and into more rural relaxed mode.

Belated Happy New Years!!




Aaron and I met up in Chicago over New Years. We spent time with our friends Brett and Jenelle and then hung out with the cousins - it was a good time and of course went by too fast.
